Our Concept

Each week, a new renowned guest chef takes over the kitchen at this seasons PopUp restaurant and is given a task - make their specialties with local ingredients. The chefs bring their own style to take us on a culinary journey through a 7-10 course menu. We have enjoyed cuisines ranging from the Mediterranean to the Norwegian coast to the islands of Asia. The menu can be enjoyed with a wine package, where our wine master has expertly paired each course with a complimentary wine.

Our previous PopUp destinations

PopUp Svalbard

Inside a decommissioned coal mine outside of Longyearbyen, we had our second PopUp. We packed our suitcases with delicious flavors and wine and traveled 78 degrees North. Gruve 3 is a coal mine with a rich history. Before guests entered the restaurant, they received a guided tour of the mine and heard moving stories from a real Coalminer"

Our interior designer had a close collaboration with the locals to incorporate authentic props from the mine into the restaurant decor: wardrobes of the miners, safety helmets that illuminated the restaurant, coal on the tables, and genuine signs and wood that had been used in the mine.

PopUp Otternes

Otternes Bygdetun was where it all started in 2021. The 17th-century rural farmstead is located between Aurland and Flåm by the UNESCO-listed Aurlandsfjord in Sogn, Norway. Here, the chefs had the opportunity to use local ingredients from the organic agricultural school, meat from local farmers, crayfish from the fjord, and traditional goat cheese made at the summerfarms.

The farmstead was transformed into an exclusive restaurant, spread across several of the buildings on the estate. Local artwork was on display, and we welcomed guests during the daytime for a picnic lunch to enjoy the stunning fjord view

PopUp Bodø

At the picturesque Landego Lighthouse on the island of Eggløysa, just off the coast of Bodø, we hosted our third PopUp destination. The lighthouse's history dates back to 1901, and, set against the backdrop of breathtaking natural scenery and unique fishing opportunities, our guests could savor a stunning view combined with the delightful flavors of the sea.

Guests' experiences commenced with a magnificent boat trip from Bodø city center to the lighthouse. Upon arrival, guests were treated to insights into the life that has unfolded here in both more recent and older times. The culinary adventure unfolded in the old 'boathouse' with beautiful ocean views and a refreshing sea breezes right outside. It has been a pleasure collaborating with Skagen Opplevelser, allowing us to share the history through this PopUp experience.

PopUp Stranda

Our fourth PopUp took us to the industrial town of Stranda in Møre og Romsdal. Here, we struck a deal with the “ham-mayor” Oskar Gjærde to borrow Skinkerådhuset, an old bank building furnished by the local furniture manufacturer Slettvoll.

We brought along our PopUp chef, Kevin Karlsson, who served a three-course menu of local produce every Monday, Tuesday, and Wednesday. As usual, we invited guest chefs to create their 7-10 course menus on the weekends, and we had the voice of the Stranda advertisement, Sigurd Drege, sharing the industrial history with guests. On Sundays and Wednesdays, we hosted Afternoon Tea during the day.
